Kale Salad Perfection

I know, I’m losing credibility because every salad I make is like the best salad ever. But this one is no joke. I have made it 3 times in the past 2 week, so easy, gets rave reviews. Part of what I loved about this recipe was discovering the method used for de-stemming and slicing the kale. It’s not life changing, but close. Seriously, thanks to Jackie of Marin Mama Cooks for the kale prep tutorial. My blog totally loves and admires your blog.

Kale Salad

Serves 4


  • 1 bunch lacinato/dinosaur kale, de-stemmed and thinly sliced
  • 3 tablespoons lemon juice
  • 3 tablespoons extra-virgin olive oil
  • 3 large cloves garlic, minced
  • pinch of fine sea salt
  • pinch of freshly ground pepper
  • pinch of red pepper flakes, to taste
  • 2/3 cup grated Parmesan cheese – I used a bit less

Directions (you gots to check out her pics to follow this properly)

1) To de-stem the kale as well as cut it into thin strips:

  • Grab a stalk of freshly washed and dried kale, holding it by the stem with one hand while placing the pointer or middle finger and thumb of your other hand around the stem just above the leaves. Pull your fingers along the stem, tearing the leaves off.
  • Here is how to cut your kale into thin strips. You can also use this technique for any sort of lettuce and herbs. Take the kale leaves and lay them on top of one another and then roll them up tightly.

2) Whisk together lemon juice, olive oil, garlic, salt, pepper, red pepper flakes in a small bowl.

3) Pour the dressing over the kale and make sure to massage it well so that all the kale absorbs the dressing. When I say, “massage” your kale, I literally mean, get your hands in there and massage it.

4) After your kale is well tossed, add the parmesan cheese and toss again. Let the salad rest in the refrigerator for at least an hour.

Bonus, it tastes just as good the next day, not soggy at all.

The Best Kind of Anniversary

Duuuuuh. The Nordstrom Anniversary Sale, of course! For lots of people, myself included, this is the shopping event of the year. I mean, what’s not to like. They bring in new fall merchandise and take 33% off. If you don’t like to save money, by all means, skip it. For me, it’s the perfect time to refresh my basics like bras and undies, but also a great time to throw down for a pair of Frye booties or my favorite Paige denim. Nordstrom changed the sale a few years ago so that there is now a weeklong presale, open to Nordstrom card holders only. Then begins the sale for the common folk. If you don’t get there early enough, the selection is definitely not the same. Seriously, if you don’t have a Nordstrom card, get one, this sale makes it worth it.

I took a half day on July 10 and hit Bellevue Square with my friend Leslie. This is serious business for me. A lot of ground to cover in 4 hours. I am still editing things down, I did some massive damage. It’s not easy, I tell you. #onepercentproblems. If you haven’t shopped it yet, what the funk are you waiting for? Prices go up August 4th! Sharing a few of my faves below:

Jackets – I am a total whore for good outerwear, as you’ve seen in the Spring Coat Obsession post. I picked up 2 little beauties on this sale, and 1 is a direct knockoff of the Vince Scuba Jacket ($995 – never gonna happen) I included in the other post. I am thrilled with my new Trouve leather moto jacket, and for $199. Um, yeah, sold. (FYI – Trouve is a Nordstrom in-house brand, this is where you can get the best deals.) The other jacket was a Rag & Bone Canvas Military Jacket, love it. I’d show you a pic, but it’s already sold out. See, I told you…

Sweaters – I cleaned up on sweaters this year. Lately, the strangest thing has been happening at Nordstrom. Point of View is calling my name. Is it because I’m turning 40 in 2 years? Not sure, but I can’t walk by that department without seeing something I really like (I try to balance it out by my refusal to let go of BP). Another in-house brand is Halogen and I was blown away by the sub $100 pricing on tons of gorgeous cashmere, tons of colors and styles. I picked up the High/Low Cashmere V-Neck Tunic in navy ($98.90) and 2 of the Solid Cashmere Sweater ($84.90) in grey and camel heather.

Shoes – The sale is about boots, boots, more boots, and booties. Tons of fantastic tall boots if you need a pair, but I am still way into booties. I cannot wait to wear my new Frye Patty Leather Riding Bootie in redwood ($218) with some skinny jeans and one of my new Halogen sweaters. I. Love. Fall.

The Best Kind of Weekend

I just had one of those. For the 2nd year in a row, Oliver and I were lucky enough to be invited up to our friends’ cabin on Hood Canal for the 4th. The trip consisted of 12 kids, 14 adults, food, lots o’ booze, and an all around great time had by all. These gals are 3 of my best college friends, a tried and true little foursome (plus one awesome little sister and a few parents). We have been together for the past 20 years and have gone through it all. Lots of good times, some not so good, but we’re still together and there is so much love between us. We laugh over things I’m not sure others would find as funny (I’m actually pretty sure they wouldn’t), we talk about everything. This is the kind of weekend that fills me up like nothing else.

Now we get to mix in all of our kids which just raises the awesome level significantly. They run around and play on the beach, happily occupied with each other. 2 of the gals also have 4 year old boys, Oliver had a blast with them. His favorite toy of the weekend was a weapon, made out of 2 sticks, taped together. Love it honey. No TV, just good, old fashioned, fun with nature.

It is such a luxury to get out of town for a holiday weekend, and when we’re there, we just hang. No one cares what they’re wearing, there’s really no agenda, other than the eating and drinking, pulling up crab pots, cooking, cleaning up, boating, tubing. Repeat. And we eat really, really well. The best ribs I’ve ever eaten one night and the next night was clams. Oh, those clams. I dream about them. Butter, garlic, shallots, white wine…mmm. I am allergic to crab and I don’t even care because of those clams and the delicious broth that I could dip an entire loaf of bread in and devour. We made s’mores on the beach and did our own fireworks show. I am pretty sure there is no better 4th of July to be had. Best time ever.

I feel so lucky to have these special ladies in my life and love that we are making this family trip a tradition. Love you Rob, Farrah, Pickle, Fizzy!






My Perfect Summer Outfit

I have completed my perfect summer outfit. I tried it on today and am ridiculously excited to wear it. Now I just need the right occasion and cooperation of the Seattle weather.

I love shorts. I found these little darlings, the Hibiscus Floral Short ($69.50) at Jcrew last week, they were doing 30% off shorts, no brainer. I mean, how fun is that pattern?! Side note – Jcrew has my fave shorts around, the 4″ Chinos ($45, all still 30% off), tons of colors, I have white and a bright cobalt blue from last summer.  Back to the cute new floral guys, I wanted to pair with a navy top and saw that one of the best tops around, the Joie Alicia tank, came in navy ($128 – plus a 25% off coupon at Piperlime). Sold. Complete the outfit with my new Stuart Weitzman X-Ray wedges ($430 on sale for $250 at Neiman Marcus).
